Maamoul
Ingredients
For 9 people
- Coarse yellow semolina: ½ kg
- Butter: 1 ¾ cups
- Yeast: ½ tablespoon
- Mahlab: ¼ tablespoon
- Sugar: ¾ cup
- Powdered milk: ¼ cup
- Water: 1 cup
- To prepare the filling:
- Pistachios: ½ kg
- Sugar: 1 cup
- Rose water: ¼ cup
- Sugar syrup: 2/3 cup
- Olive oil: 1 tablespoon
- Pitted dates: 1 kg
- Sugar: ½ cup
- Powdered nutmeg: ½ teaspoon
- Orange blossom water: ¼ cup
Instructions
To prepare the dough: mix the ingredients well in the Moulinex Masterchef Gourmet until you get firm dough.
To prepare the fillings: blend the pistachios and mix with the sugar, sugar syrup and orange blossom water.
Put the olive oil in a bowl; add the dates, sugar, nutmeg and rose water.
Blend in the Moulinex Masterchef Gourmet mincer head until smooth.
Shape the dough into walnut-sized balls. Put a ball in the palm of your left hand and make a hole into it, using the thumb of your right hand. Fill the hole with the pistachio or date mixture. Seal the dough around the filling and make a well in the center.
Repeat the same steps with the remaining dough balls then place the cookies on a non-stick baking tray.
Bake maamoul cookies in a preheated 180°C oven for 30 minutes, making sure to shake the tray from time to time.
